..........never crawled out until about 9:30 this a.m.,(& seriously thinking about crawling back in too!....lolol)
Think it is around 50'f here in Etobicoke today....Sun is shinning & the sky is blue BUT dh says it is "chilly"!
Been sick for nearly a week with a cold BUT I think it is slowly "leaving home"....thank goodness!
Hate being sick..especially when ya still hafta work.....through it!
Have also been doing a lotta knitting......hafta get caught up....
sooooooo far behind in "doing the Grannie thing"!
Also have found I don't have as much to say as I used to......(some might find that unusal)...lolol
Haven't been spending very much time at all online...
Anyway.......

Pumpkin Pie Recipe:
(I like this one the best of any I have tried)

Ingredients:
3/4 cup brown sugar packed.
1& 1/2 tbl sugar.
3/4 tsp cinnamon.
1/2 tsp ginger.
1/2 tsp nutmeg.
1/4 tsp allspice.
2 cups canned "real" pumpkin.
1& 1/4 cup evaporated skim milk.
3/4 cup egg whites, whipped.
2& 1/2 tsp vanilla.
Preparation: Preheat oven at 375.
Make pie crust.
In a mixing bowl, combine sugars, cinnamon, ginger, nutmeg, and allspice.
In another mixing bowl, combine pumpkin, milk, egg whites, and vanilla.
Mix dry ingredients with wet ingredients just until moistened.
Pour into prepared pie pan.
Bake for 50 to 60 minutes, or until crust is nicely browned and the filling is set in the center when jiggled.

"Easy" Turkey Soup!

Ingredients List:


Carcass of one turkey.
4 cups of chicken stock.
4 cups of water.
1 cup of dry white wine.
¼ cup of all-purpose flour.
6 peppercorns.
2 parsley sprigs.
1 celery stalk, chopped.
1 medium onion, chopped.
1 bay leaf.
1 carrot, chopped.
2 teaspoons of butter.
1 teaspoon of vegetable oil.
½ teaspoon of Thyme.

Instructions for Turkey Soup:

Heat up the butter and vegetable oil over medium-high heat


Cook the celery, onion and carrot, stirring for about 10 minutes.

Add the flour and reduce to medium heat, cooking for 2 more minutes.

Stir in the chicken stock, water and dry white wine. Bring to a boil.

Add the turkey carcass broken in pieces, plus the peppercorns, parsley, bay leaf and thyme.

Simmer the soup, covered partially, skimming any froth as it comes up to the surface, for 90 minutes.

Once cooked, strain the soup, then either serve immediately or refrigerate if serving later.

You can always add diced turkey to this OR even noodles, on the day you are maybe re-heating to eat.

Chicken Marsala
Recipe has been scaled to make 8 servings.
This is awesome!!!!

1/2 cup all-purpose flour for coating
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
8 skinless, boneless chicken breast halves - pounded 1/4 inch thick
1/2 cup butter
1/2 cup olive oil
2 cups sliced mushrooms
1 cup Marsala wine
1/2 cup dry sherry

1 In a shallow dish or bowl, mix together the flour, salt, pepper and
oregano. Coat chicken pieces in flour mixture.

2 In a large skillet, melt butter in oil over medium heat. Place chicken
in
the pan, and lightly brown. Turn over chicken pieces, and add mushrooms.
Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes,
turning once, until no longer pink and juices run clear.

Amish Mustard Eggs
4 tablespoons yellow prepared mustard
2/3 cup sugar
1/8 teaspoon salt
3/4 cup white vinegar
3/4 cup water
2 drops yellow food coloring
7 peeled, hardboiled eggs

Put first 6 ingredients in small saucepan and bring to boil. Put peeled
and boiled eggs in a heat safe dish and pour boiled ingredients over
eggs. Cover and refrigerate, let stand 72 hours.

Afternoon!
Fitfull sleep last night BUT stayed flat regardless!........lolol. Paul is really sick with whatever I seem to be getting rid of!

Hafta go to the store, need some celery & a bag of peppercorns for this new turkey & also new stuffin' recipe I am gonna try tomorrow.Already bought the rosemary, lemons and a huge bulb of garlic! Hafta make a loaf of cornbread tho.....maybe in the breadmaker?
I'll go and get the rest of the stuff BUT it will depend on how "HE" feels tomorrow IF I cook it.....Would be useless to waste my time IF he feels like crap and doesn't wanna eat, right?
Sun is shinning and it seems to be warm BUT me thinks it ain't!(good for me, BUT the average bear wouldn't like it!).
Hunted up some stew recipes this a.m.,..(getting to be slow cooker time around here)...not much else done, made him some toast, have some marrow bones simmering,(God! do they smell good all the way up here on the third floor).......lolol
There is sooooo much I should be doing BUT I ain't gonna!
Guess I better get a move on to "do nuthing"!
