Leavening Agents are used to lighten a batter or dough by creating carbon dioxide gas, air, or steam that will make it rise



Yeast

Baking Powder

Baking Soda

Beaten Eggs or Egg Whites are often used to leaven, they enclose air which is forced to expand in a hot oven.
