Marinated Mushrooms




Makes 6 servings



1/2 cup olive oil

1/4 cup fresh lemon juice

Salt to taste

Freshly ground pepper to taste

1 clove of garlic, mashed

1 lb fresh mushrooms

1/4 cup minced parsley



Combine olive oil, lemon juice, salt, pepper, and garlic in a deep bowl (not aluminum) mix well

Wash mushrooms quickly under cold water, pat dry with paper toweling

Trim ends from mushroom stems, slice mushrooms thin lengthwise, directly into dressing (This keeps mushrooms white) stir lightly so that all the slices are coated with dressing, cover

Refrigerate several hours or overnight, stirring occasionally

Before serving, drain, sprinkle parsley over top
