 Scalloped Onions

Scalloped Onions

6 medium yellow onions

3 tbsp butter or margarine

2 green or red peppers

Dash salt

Dash freshly ground pepper

2 tsp dried thyme or

2 tbsp fresh thyme leaves

2 tbsp chopped parsley

1 cup half and half

1 tbsp all purpose flour

1/2 cup grated Parmesan cheese

Paprika, optional

Peel and slice onions

In a skillet, sauté onion in butter until soft but not brown

Rinse peppers

Remove seed sand membrane

Slice thinly

In a lightly greased 1-1/4 quart baking dish, layer sautéed onions and peppers

Sprinkle with salt, pepper, thyme and parsley

In a saucepan, heat half and half

Add flour, dissolved in a little water

Bring to a boil, stirring

Cook, stirring, for about 3 minutes, until thickened

Pour half and half mixture over onions and peppers

Sprinkle with Parmesan cheese and a little paprika, if used

Bake, uncovered, at 350 for about 25 minutes until bubbling hot and lightly browned on top
